This tasty little snack basically came about one Saturday
night when deciding what to have for dinner. Both my husband and I knew we were
in for a movie night on the couch and that always involves popcorn. We were
kind of in that stage where we wanted dinner but knew we wouldn’t be able to
handle a big dinner and popcorn. I kind of laughingly threw out there “We

going to be using Sweet Mini Bell Peppers…again…you’re gonna have to trust me
on this. By the time we’re done with this dish I can almost bet that you won’t

will be to boil the Sweet Mini Bell Peppers first…pretty much like you would

ricotta cheese we’ll be using Low Fat Cottage Cheese. Using the Cottage Cheese
also adds a bit more bulk than regular ricotta cheese can bring. Don’t worry
though we’ll also be stuffing our Shells with Mozzarella and Parmesan to make
this dish super cheesy. <o:p></o:p></span></div>

get our Frozen Spinach into a microwavable safe bowl and pop it into the

Fat Cottage Cheese, Shredded Mozzarella, ¼ cup of Shredded Parmesan,
Seasonings, fresh Parsley that has been roughly chopped and ¼ cup of Reddi Egg.

Spinach has been thawed place on a clean kitchen towel and wring out as much

Spinach to the bowl with the other ingredients and mix until all are well

knife take your Sweet Mini Bell Peppers and cut them from almost the bottom of
the Pepper towards almost the top. You want to create little mini boats so the

the seeds and veins and place in a pot of bowling water for about 7 to 8
minutes until slightly softened. Then drain and shoot down with cold water to

time to stuff our Peppers. Use a small spoon and fill the Peppers with the

Get your Frozen Spinach down into a medium sized,
microwavable bowl and defrost in your microwave.<o:p></o:p></div>

Drain your can of Water Chestnuts and give them a rough
chop</div>

Once your Spinach has defrosted place it on a clean kitchen
towel. Twist the towel around the spinach and ring out all of the water over
the sink. Try and get out as much water as possible…you don’t want your dip to

Get your Spinach back into the bowl. <o:p></o:p></div>

Drain your Tofu and then place in your bowl with the Spinach
and mash until smooth. You could also put your Tofu in a separate bowl first
and use a hand blender to get a smoother consistency or use a blender. I prefer
to mash with a fork because I like to have my dip as hearty as possible. <o:p></o:p></div>

Once your Tofu is smoothed to the desired consistency you

years ago I decided to try my hand at them and I have to say they were even

Now in the past I’ve used Wheat Germ as a filler to my
Burgers but with my recent love of Almond Meal…you guessed it, I decided to use
that as my filler. Plus Almonds are good for you! They help reduce the risk of
a heart attack and heart disease, lower cholesterol and help lower your blood

Rough chop your Red Bell Pepper & Red Onion. Place in a
food processor or blender. <o:p></o:p></div>

Add in your garlic cloves and puree.<o:p></o:p></div>

Place a strainer over a bowl and empty your puree. Using a
spatula or spoon rub your puree against the strainer to remove as much juice as

Drain your can of Black Beans and empty into a medium sized
bowl and mash your Beans lightly. You just want to break them up not totally
mash them. <o:p></o:p></div>

Place your puree into the bowl and add in your Salt, Pepper,
Cumin and Almond Meal. <o:p></o:p></div>

Next add in your Egg.<o:p></o:p></div>

Using your hands combine the ingredients. If you find that

Now you can start forming your Burger patties. Roll into a
slight ball in your hands and pat out into a patty. This recipe should make 4

Place your Black Bean Burgers on a baking sheet that you’ve
spayed down with Olive Oil spray.<o:p></o:p></div>

Place into a 350 degree oven and cook your Burgers for
approximately 15 minutes on each side. You want your Burgers firm so time will
vary based on your oven and the consistency of your mix. <o:p></o:p></div>

To start off instead of using Potatoes I chose to use a combination of Cauliflower, Broccoli and Carrots…hold on now…don’t run off. Once prepared like a Potato you’ll barely tell the difference…you’ll just have to trust me on this one.</div>

Boil a rather large pot of water.</div>

Once you’ve brought your water to a boil add in your Broccoli, Cauliflower and Carrots. Cook until tender.</div>

My thoughts on making this recipe came about from the Valentine’s Day candy heart and the fact that they always hold at least one of those Chocolate Covered Cherries. You bite into them and they ooze with goodness. So today I bring to you my little version of Chocolate Covered Cherries in Brownie form.</div>

My box mix as most often do called for vegetable oil and again instead I chose to use Apple Sauce to cut down on the fat factor. I often get asked “Do you taste the apple?” my answer….not one bit. When all is said and done you’ll actually forget that there is Apple Sauce in this recipe.</div>

In a medium size bowl combine your Trader Joe’s Brownie Mix, Water, Egg and Apple Sauce into a bowl.</div>

Mix until smooth.</div>

Spray down an 8 x 8 baking dish.</div>

Get about half of your Brownie Mix into your baking pan and level it out.</div>

Using a small spoon dollop about ½ cup of Cherry Preserves across the top.</div>

Smear the Cherry Preserves across your Brownie Mix using your spoon and get the Preserves towards the edges. It doesn’t have to be perfect. No worries.</div>

Now get the rest of your Brownie Mix into the baking pan.</div>

Also, it’s great as a grab and go breakfast throughout the week. You can make them at the start of your week, package them up separately and grab them as you’re heading out the door for work or school.</div>

This is not some bitter granule that‘ll have you wishing you’d use the real stuff. Nope. Coconut Sugar has a real rich, sweet flavor and did I mention that you can use it in place of white and brown sugar? Yep. I even use this in my tea at night it’s so good. So go out and find it, use and I promise you you’ll enjoy it as much as I do.</div>

One of my subscribers asked for a protein Hot Chocolate and yeah I could have gone the protein powder route but that’s a bit overdone and in fact I think I’ve already done it. I also wanted to add just a bit more fun and flavor to the Hot Chocolate so I decided on Peanut Butter. Packed with protein but also brings in that creamy, saltiness factor that plays so well with chocolate. I’m only using 1 tablespoon in my recipe but to bump this up a few notches you can of course use another tablespoon just make sure to factor in the calories and fat with whatever diet plan you might be following.</div>

It has a rich, nutty flavor and is versatile in the fact that you can use it to replace both white and brown sugar in your recipes. The health factor to using Coconut Sugar is that it is low glycemic so it’s perfect for anyone who is diabetic and also for those trying to watch their weight.</div>

The first time I had these was at Geisha House restaurant here in Los Angeles. I saw them on the menu and asked our server about them and he said they were the most popular on the menu. Sold. I can tell you with all honesty that it was love at first bite. I couldn't believe I had never had these let alone heard of shishito peppers. That weekend I went to a Japanese grocery store in Culver City and picked some up and we've been buddies every since.</div>

First up you want to line a baking sheet with foil.</div>

Next get your Shishito Peppers down and spray them generously with Olive Oil spray.</div>

Sprinkle down with some Salt and Pepper.</div>

Toss them around a bit until the Peppers are thoroughly coated.</div>

Fold the edges of the foil in to cover the Peppers completely because want to steam them a bit first.</div>

Pop them in a 450 degree oven for about 15 minutes.</div>

Once out of the oven unwrap them and the fold the edges back.</div>

Place them into a broiler for about 10 minutes to get a bit of a char on them.</div>

Allow Chicken to marinate at least 6 to 8 hours in the refrigerator.</div>

When ready line a pan with foil and place your Chicken Tenders down.</div>

Pour the juice and spices over the top of the Tenders.</div>
